Summer comes and every bit of land, especially in the south of the Canary Islands, is covered in an intense red colour like fuchsias: Indian prickly pears ready to be picked or not, growing wild. This delicacy, originally from Central America, has a sweet taste and many nutritional and medicinal properties. The prickly pear hides an insect called the cochineal, highly valued all over the world as a base for natural red dyes. A huge explosion of colour!
